While I totally respect those who showered their moms in beautiful gifts this Mother’s Day, my mom’s gift was a bit more simple – but even more valuable if you ask me. The gift of time is by far the most precious. It’s the one thing we can never get more of, and are always hoping to receive from the ones we love. Along with that shared time, my family shared a fabulous brunch perfect for everyone’s dietary restrictions: gluten-free, dairy-free French toast bake.
My eating habits seem to be a long string of craving something rich and dairy-filled, and then desperately searching for something to satisfy that craving but not kill my stomach. And tonight? Tonight’s dinner: Italian turkey sausage, spinach, and gnocchi. And oh my goodness, it was so yummy.
3 things that made me LOVE this new recipe:
- Gnocchi – aka heavenly little potato pillows. Tortellini and ravioli used to be on my short list of go-to quick dinners. However, the fact that they’re filled with cheese left my stomach less than pleased as my lactose intolerance progressed. ENTER gnocchi. These delicious little potato pillows are cheese-free and still super creamy and rich. They satisfy my tortellini/ravioli craving, and with this recipe I don’t miss the cheese one bit!
- Italian turkey sausage – With roughly half the calories and a third of the fat of it’s pork counterpart, I’m hereby making the switch to Italian turkey sausage. Try it! You definitely won’t be disappointed!
- So inexpensive! – S/O to my local Aldi for having everything I needed for this recipe, AND it all cost less than $10.
Let me start by giving you a quick list of my favorite foods: Mac & cheese, mozzarella sticks, Alfredo pasta, and ice cream.
What do all these foods have in common? They’re incredibly creamy, rich, delicious, and lactose packed. Oh – and more importantly – they’re all foods on the LONG list of things I (and so many of my unfortunate lactose intolerant friends) cannot digest.
So here I am, blogging about all of my finds and fails of lactose free foods! I’ll share some amazing recipes, some tremendous fails, and other fun lactose-free content. Follow along – maybe we’ll all learn a thing or two. Or maybe we’ll just spend too much money buying obscure vegan ingredients like nutritional yeast, and resort to buying a pizza at the end of the day.
